Veggie Confetti Stir Fry

I thought this one up while in the produce section of my neighborhood market. 

1/4 cup Extra Virgin Olive Oil
4 medium Zucchini squash
1 medium Green Bell Pepper
1 large Red Bell Pepper
2 snack-size packages baby carrots
3/4 to 1 cup white onion (or you can use a red onion for better color)
3 cloves finely minced garlic
1 teaspoon Italian seasoning
Salt and Pepper to taste
  1. Heat olive oil on medium high heat in a large saute pan.  
  2. Finely dice all vegetables.  Place peppers, carrots and onions in hot pan and stir-fry with salt, pepper and  Italian seasoning for approximately 10-15 minutes.  Add zucchini and garlic.  Fry for an additional 5 minutes or until vegetables are fork tender and still have a slight bite to them.  
  3. Season to taste.
Makes 6-8 servings.
