Soft and Chewy Molasses Cookies

This recipe is from the jar of Grandma's Gold Standard All Natural Molasses (Unsulphured) original flavor.  These cookies are on the top of my list as my favorite cookies, next to peanut butter.  They taste just like Grandma Jenny's (my mother)  YUMMY!!

6 tablespoons butter
3/4 cup granulated sugar
1/2 cup molasses
1 egg
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/2 teaspoons ground ginger
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
  1. Cream butter and sugar until light and fluffy.
  2. Add molasses and egg.
  3. Combine dry ingredients into bowl.  Add gradually to wet mixture, if using stand mixer, mix on stir speed.  Mixing the flour gently will make a more tender cookie.
  4. Roll dough into a round disk.  Wrap in plastic wrap.  Place in refrigerator for 2 hours.   
  5. Put dough onto rolling mat and roll to 1/4- to 1/2 inch thickness.
  6. Cut dough with desired cookie cutters.
  7. Place parchment paper onto cookie sheets.  This will keep the bottom of the cookies turning too brown.
  8. Bake at 375 degrees Fahrenheit for 9-10 minutes or until tops of cookies look crinkly.  
  9. Cool cookies on sheet for 2 minutes.  Remove from sheet and let cool on cooling rack.
Makes 2-3 dozen cookies, depending on thickness and size.
